Housed in a turn-of-the century stand-alone bungalow, situated on a bylane off the Gateway of India in Colaba, South Bombay, the restaurant Indigo makes it mark for several reasons. The minimalist approach to its interiors where natural light takes centre-stage over ornamentation; the warmth and old-world charm; the courteous and knowledgeable wait staff; the serious approach to food preparation; and its extensive wine list which won it Wine Spectator’s Award of Excellence for three consecutive years. Conceived in response to the lacuna of fine dining restaurants in Bombay, where a meal of western cuisine could only be eaten in a 5-star hotel restaurant, Rahul and Malini Akerkar felt that the Bombay diner had traveled enough to develop a sophisticated and discerning palate, and whose need was not being met.
            
So in April 1999, Indigo threw open its doors to the public and, five years later, continues to enjoy major success. Malini has ensured that the restaurant extends its boundaries beyond a mere eating establishment. Over the years, therefore, Indigo has been host to art shows, theatre experiences, jazz nights, and several wine and guest chef dinners.
